I find this to be one one of the best chocolate cupcake recipe. The cakes turns out soft, moist and rich in flavour. I love to frost it with lemon butter cream.
Ingredients:
1¼ cup – Self raising flour
½ cup – Castor sugar
½ cup – Margarine soft
2 No – Eggs
2 tbsp – Cocoa
25g – Dark chocolate melted
Icing:
1/3 cup – Unsalted butter
softened
½ No – Lemon rind grated
1 tbsp – Lemon juice
11/3 cup – Icing sugar sieved
1-2 tbsp – Icing sugar for
dusting
Method:
Pre-heat the oven to 180C and
line the tin with the cupcake cases.
In the bowl
of your electric mixer, or with a hand mixer, beat all the ingredients, except
for the chocolate, till smooth.
Beat in the
chocolate.
Fold in the
chocolate chips.
Divide the
mixture equally between the paper cases and level the tops.
Bake in the pre-heated
oven for approx. 20-25 minutes or until well rise and springy to touch.
Beat the icing ingredients.
Transfer them to a piping bag
and then pipe out the butter cream on the cakes.
You can add green colour for
Christmas tree or red for the stockings etc.
